INGREDIENTS
- 100 g of Fonio by REBEL GRAINS
- 200 ml of water
- 200 ml of almond milk
- 1 ½ tablespoon Sugar/Maple syrup/Agave syrup
- ⅓ teaspoon of cinnamon powder
- ¼ teaspoon of cardamom powder
- ¼ teaspoon of nutmeg powder
- ¼ teaspoon of vanilla essence (optional)
- 1 tablespoon of cocoa nibs
- ½ orange
INSTRUCTIONS
Start off by soaking and washing your fonio in a bowl of warm water for 5 minutes. Just like with rice or lentils, washing your grains before using them ensures you get a better end result!
When the fonio is clean and soaked, add it to a pot with the water, plant-based milk and sweetener. Here we will add our spices: the cinnamon, cardamom, nutmeg and vanilla (if using). We personally like our porridge’s really thick, as you can see if from the picture. If you’d prefer something runnier, simply add more milk, anywhere between 50 and 100ml!
Cook this mixture on a medium to high heat, for about 8 to 10 minutes. Make sure to mix it continuously, as otherwise the mixture could clump and stick to your pot.
When your porridge is cooked, it will have absorbed all or most of the liquid. Transfer it to a bowl and top it off with oranges and cacao nibs. The fonio breakfast porridge is ready!
