ZIZANIA & LENTILS

INGREDIENTS

  • 100 g of Zizania Aquatica by REBEL GRAINS
  • ½ escarole
  • ½ shallot
  • 1 tablespoon of raisins
  • 1 pinch of sea salt
  • 1 tablespoon of pumpkin seeds
  • 1 teaspoon of soy sauce
  • 1 teaspoon of fresh ginger
  • 2 tablespoons of extra virgin olive oil

 

INSTRUCTIONS

Soak the Zizania Aquatica for one night. Then, in the morning, cook it in lightly salted water for 25 minutes. Drain and set aside.

Meanwhile, wash and chop the escarole into small pieces. Sauté the chopped shallot in a pan with a drizzle of oil, then add the escarole. Cook for 15 minutes over medium heat, and when it's slightly dried, add raisins and soy sauce. Stir-fry, and when it becomes tender, also add the Zizania Aquatica and let it absorb the flavors.

Serve with toasted pumpkin seeds and fresh ginger.
